The soup is thick, umami and smooth. Very good, there's actually quite a strong funk. Plus it's a ckn and pork mix so it's much stronger than your normal ckn broths. Toppings were generally quite decent

This is a good bowl of ramen. And for something so innovative, the execution is extremely solid, making it one of the best in our tiny red dot's bare ramen scene

Make no mistake, it's huge without the extra beansprouts.

However it's nice to know that this huge mound is mainly beansprouts, so it's very healthy if you ignore the generous amounts of fats on top. Char siew is also just a block of meat, tender and somewhat fatty but not jelat at all. Very satisfying.

The noodles are a little bit chewy, it's flat but it can have a bit more character. Meanwhile the soup is thick and very good, it's what you expect of a strong style ramen. The miso flavour goes well w the overall profile.

The queue here is quite something. I advice you to reach 530 on a weekday dinner, otherwise I overheard that a late lunch is great in terms of the queue. We reached at 545pm on Monday and they slowly started letting people in by 6pm. By the time we got seated it's close to 620pm and it was 650pm wehn we got the food.

Then again, it's hard to find proper ramen in Singapore. So the speed can be forgiven, and the popularity understandable. Half the queue is Japanese so that should give you some idea of the quality of the food

Must try if you're a ramen lover. Nothing much to complain for the execution, it's generally on point

If you never had Jiro Style Ramen before, I can tell you that this is not for everyone. I would describe it as tonkotsu on steroids; everything is rougher, chunkier and richer. If you love a hardcore intense flavour, then you will definitely love this.

The Megamen ($13.90) at @brosramen is the Jiro Style ramen and I must say, it taste almost exactly like what I had in Japan. The soup itself is extremely thick, rich and creamy and would definitely be too salty for most people, but to me it just shouts flavour. You can really taste the soya sauce and the pork broth here. The noodles are much thicker than usual, hence it has a good bite to it which I loved. You might notice that the ramen toppings are quite unusual, but that is how it is supposed to be! It is topped with a generous amount of bean sprouts to cut the fat flavour, and a huge amount of garlic and pork fat to intensify the flavour more. The cha shu may be a chunky piece, but it was so tender and marinated well.

That said, if you prefer a lighter tasting ramen, then this is really not for you!

I believe most of their ramen are saltier than your usual ramen chains to suit the Japanese palette, and that is why I saw so many Japanese people having a regular meal there. Definitely an authentic experience, as I felt like I was transported back to Japan. Absolutely splendid and I can't wait to try their other bowls.

Chicken collagen max ramen! Totally delicious and pure in taste.

P.S. got to be early as they cook each bowl upon order and a 15 pax queue would probably end up with a good 45min wait to be served

Megamen (Dry) - $13.90

Huge portion of ramen, with generous portion of noodle and bean sprouts. Thick cut braised pork is accompanied with minced pork belly, seaweed and a whole egg. I ordered double portion of garlic, double the shiokness. Suggest picking the less salty version at kiosk when ordering

Have been aware of this place for long time but never gotten the chance to try.

This week as I was searching for some Japanese ramen and this place appear on my list.

They open for limited time only everyday so do check out their Facebook page for latest operating hours.

The brothers ramen is the most basic item on the menu. It has the original soup base with pork chashu, chicken chashu, homemade noodles and menma.

I really like the chashu especially the chicken, very soft yet remain tender in every bites. The soup was so tasty that I finished drinking all of them. $12.90
