Three culinary rules of sourcing only the finest sustainable ingredients, simple yet skillful preparations featuring the South American asador technique and an inherent respect for nature are embodied in SKIRT’s raw organic design, featuring a hanging glass horn installation, leather chandeliers, chopping blocks suspended on chains, a marble countertop in the open kitchen, wooden panels and leather trimmings framing the grill, and floral-handled brass cutlery. The dinner experience at one of Sentosa’s best restaurants is inherent in each detail characterising the chef’s collaborative ethos of technique and ingredients, beginning from the butterflies on the reception stand to lighting and wood panels that complement the sensational aromas emanating from the grill.

My personal favourite is their Dry-aged Duck ($148++ for 2 pax) Culinary masterpiece that boasts a rich, concentrated duck flavor with notes of umami and a complexity that only comes from patient aging. The meat is tender, and its natural juices are both intensified and better retained, leading to a juicier and more satisfying eating experience.

4.25⭐ We purposely came all the way to W hotel for Skirt Restaurant. Started with the amuse bouche which is just watermelon. I was slightly disappointed upon seeing the amuse bouche as I was expecting something more creative. Then a bun of warm focaccia bread was served with herb butter and salt. Yes it's really a whole bun and we finished it bcos it's really worth the carb. We ordered an appetizer for sharing which is the grilled octopus. WB passed the remark that this is the best octopus he has eaten so far. Grilled to perfection, chewy inside and the skin slightly charred, I wish this is in one of the mains instead of appetizer. We are served a bottle of palate cleanser which is bourbon whiskey with apple and ginger ale. It just taste refreshing and sour, didn't even feel the alcoholic content. Finally the steak is served. I ordered the Tajima wagyu butcher cut while WB had the aged beef. Oh well, it turns out that I prefer the aged beef than the wagyu butcher cut. I wondered why as the wagyu beef I ate are practically melt in the mouth but this didnt. The butcher cut is too lean but it isn't tough either. The aged beef has the right amount of fats hence melted in the mouth. We ordered a dessert for sharing, it's peach sorbet served with chocolate crumbs, pistachio sponge and chocolate wrapped with nuts styled similar as ferrero rocher. A complimentary chocolate mousse cake was also served as WB has indicated a birthday celebration.
