cheese ramen was lit - but high in salt content so not for the health conscious

On top of their signature Tonkotsu ikkyu ramen which is unique in their generous spread of pork collar cha shu 🐷💗 they now have ⭐️MANRIGAN MAZE SOBA and TAISHOKEN’S TSUKUMEN ⭐️ both of which are authentic recipes from Japan 🇯🇵 especially the maze soba, I first had this voluminous vege and ingredient ramen bowl in Japan, this taste and looks exactly like it 🥰 the tsukemen broth dip is really really thick as well 💯

The cheese is aburi style, sitting on sukiyaki pork. Cheap, basic noodles. Passable.

Piping hot, the Mentai Takoyaki ($7) was also super shiok. Nice and crisp on the outside and tender on the inside. Salty and with a slight hint of spice, the sauce lends the dish a nice richness. But it wasn’t greasy or cloying.

Spotted with a fresh look after the shift to their new unit at Bugis+, Ramen Champion is back with hand-kneaded ramen noodles made in-house daily. And what better way to enjoy the preservative-free noodles than having it ‘Tsukemen-style’. Jam-packed with umami flavour, 大勝軒 Taishoken’s Tsukemen dipping broth was boldly and unapologetically savoury - a little sweet and smoky as well. Made with dried anchovy and dried bonito, the meat-based broth was also hearty and lip-smacking. A little rich in the beginning, the broth was not overly thick but for me, I like adding the soup wari (special dashi broth) served alongside to balance out the heavy flavours. The noodles were bouncy, slurpy, slightly chewy, and held on to the sauce pretty well. As for the other elements, the ramen egg and bamboo shoots were well-marinated. Tender and nicely charred, the sliced char-siu were not too ‘porky’, fatty or lean.

💬 The combination of sukiyaki marinated pork belly slices and poached egg complemented the slightly sweet tonkotsu broth really well. Breaking the poached egg and stirring it into the broth makes you salivate in anticipation for a good rich slurp. The pork belly slices were tender and well flavoured. It was my first time having a sweeter broth and I was enjoying it. The tinge of sweetness hovers on top of the tonkotsu porky-ness, slightly masking it. However, it does get a bit surfeiting nearing the end of the bowl. The noodles were thin but cooked al dente. A decent bowl but rather expensive considering the fact that this was not a restaurant.
