What to look out for; in frame the Special Kotteri Tsukemen ($16.8): Ramen cooked to Al Dente, topped with Smoked & Torched Pork Collar Chashu, Menma (aka preserved bamboo shoots), Nori, Spinach, Ajitama, Fishcake. Dipping broth is a blend of Chicken, Pork, Oinion, Ginger, Garlic, Carrot & Leek that's boiled over high heat for 15 hours! One can add a squeeze of lime to the noodles before dipping into thy broth but I personally love to do away with that.

Nestled within the Ramen Champion cluster in Bugis+ is Joshoken, a Tsukemen joint from Japan. Tsukemen is a style of ramen where noodles are served separately from the dipping sauce. Joshoken, a brand under the winner of the Super Tsukemen Exhibition last year, uses two broths to get its unique dipping sauce and requires 15 hours of boiling and constant stirring before it's placed in the fridge to cool. Tastemaker Justin Teo advises sharing a Tsukemen with a friend, as the portion of noodles can be too filling for one. Go for the Special Kotteri Tsukemen ($16.80) that comes with a blend of chicken and pork broth as the dipping sauce. Justin loves how the pork collar and belly cha shu served with the ramen has a smoky fragrance, a result of it being lightly torched before serving. Once you're done with the noodles, be sure to add dashi stock to the remaining dipping sauce and drink it as a soup. Otherwise, try the crowd-pleasing Maze Soba ($14.80), a dry ramen that comes topped with creamy mentaiko, spring onions and a wobbly onsen egg. Toss the entire dish thoroughly before digging in!

What I like about this is the pork collar chashu and pork belly chashu, which had a smoky fragrance due to it being smoked and torched before serving. The dipping broth was a blend of chicken and pork, cooked for 15 hours over high heat and constant stirring. When you're done, add the dashi stock to the remaining dipping broth and drink it as a soup. Be warned though, the noodles are thick and thus very filling, order to share :)

We like the Maze Soba, which is a dry ramen that is creamy due to mentaiko and poached egg. You can also pour porridge over the leftover umami goodness and slurp it all up, it's very comforting.
