I don't like HDL but came for a friend. This is one of the free-flow items. Very shiok, especially with the many condiments. But overall again I wasn't impressed.
😭 Speaking is which... I should totally learn how to make the broth.

Wide variety of items to pick from & all dishes served at lighting speed. The 三鲜 soup base won my heart. Another thing I loved is the cheesy beef meatball, I can’t resist the stringy melted cheese inside the meatball, so shiok. The skilful Come experience it yourself. It’s not cheap, that’s as harsh fact but the food and service is worth the price tag. Pamper yourself at least once when you have the luxury of time, slowly enjoy the experience, they are open till 6am afterall

Hai Di Lao was a household name to steamboat lovers for many reasons. Some like to indulge in up to four types of soup bases in one meal; some will think that it is entertaining to watch the noodle master’s live in action; some will say that they are pampered from the time they step in until they leave the place; and some will simply visit because of positive reviews.
However, as an informed diner, I know that Hai Di Lao Hot Pot is not heaven for steamboat goers, but more of an experience of slightly above average food with service that exceeds expectations. I thought that their Beef Ball with Cheese was quite delicious, but apart from that, most of the other things in the menu seem to be no different from other steamboat buffet restaurants.
That said, I really loved their Tomato Soup Base, for the fact that it was tangy enough without appearing to be too salty at first contact.
Reservations at this restaurant is almost like a mandatory action, so long as you are not willing to stand or sit at the waiting area. Some say the reservation window period is about one week in advance, but if you are really lucky, you might be allocated a table for 2 or 4 if reservation is made the day before. Just make sure you start the meal with an empty stomach.
Although this might be gory to most, I was surprised by how well this turned out. When well cooked, the meat turns white and it tasted delightfully creamy. It takes about 20 minutes to cook and I didn't regret trying it out. Pro-tip: get the half portion to test it out. 1 set of brains is usually enough for 1 person.
This brand new Hai Di Lao outlet at VivoCity is the one to head to next time you want a HDL fix without the insane queues (for now at least). With beautiful interiors and the same fantastic service, enjoy your manicure and popcorn should you have to wait. Choose to have four soup bases for variety, and don't miss the super spicy mala and tomato options. Highlights of the meal include their impressive array of sauces (add $4), the handmade mashed shrimp paste, sliced black pork and the entertaining spectacle of springy handmade noodles tossed tableside. For those of you who have yet to experience HDL, this is a good chance to get in before the queues go crazy! Open till 6am, you now have another spot to hit for those super late nights out.
