Rather a unique dish, I like the Hollandise sauce with the rosti
The egg is nicely cooked and the croissant is crisp
The Populus Scramble consisted of basic ingredients like turkey bacon, croissant, scrambled eggs with herbs (essentially spring onions and big red chilli).
Not a very good photographer (esp for food), but plating was well done, enough for me to take like a pro for once.
The textbook scrambled eggs was a win for me, the herbs gave it a slight Asian twist. But apart from that, nothing to shout about, no complexity nor depth in flavours. Croissant was very mediocre, and after 3 mouths it was all really one-dimensional. I couldnāt finish it. It just did not make the cut for such price point ($22 bef GST & svc charge).
Hesitant to come back, but if I do then Iād probably try something else. Also, there was not much viable options for my poor vegetarian friend. Her favourite mushrooms were already pre-mixed with garlic so no customisations.

creamy scrambled eggs with herbs & marinated feta, alongside turkey bacon & served with croissant! Iāll rate this a 7/10! Nothing very special about this and i think there are better food options (e.g. buttermilk waffles!!!!!! this is amazing)
Visited The Populus on saturday at ~1045am. The place was really crowded despite it being a rainy morning (do remember to make a reservation!$ Service was quite fast and efficient and the staff were really friendly :-)
The food were all slightly pricey but apart from this, it was an amazing brunch experience.
The rosti is crispy and got some chewy inside, the hollandaise sauce creamy and lightly savory with poached egg on top of the rosti, the mushroom is savory and nice, all the vegie is crispy and fresh, and the smoked salmon is so so nice. It's really like a mashup of breakfast and lunch all thrown together in 1 plate. I like all of the taste.
