When weather get colder, you know it is the best time to get some comforting meal like Bak Kut Teh.
Rong Cheng Rou Gu Cha is a stall in a coffee shop near my house. Tasty and peppery with few pieces of pork ribs.
This Dragon Rib Soup is delicious! Meats are chunky and fall-off-the-bone tender, while retaining a nice bite! The soup is well-balanced too; the peppery notes are not too overpowering! If you find this a little pricey, they also offer the usual Bak Kut Teh at $6.50, as well as other dishes like Braised Pig Trotters ($6.50), Pig Liver Soup ($5.50) and more.
A pioneer in the Chinese Teochew BKT scene since 1976, founder Lim Hai Chay recently un-retired himself to return and grow his business.

Known for being the 1st to use premium pork loin ribs, also known as dragon ribs, they cook fresh pork with water, pepper, and garlic, boiling for up to 2 hours using a house secret technique.
.
This infuses their clear broth with a delicious and distinct meaty sweet savoury peppery spice flavour, having an enticing kick, setting it apart from their competitors.
.
The large pork ribs are fresh and chunky, yet tender with a soft moist chew, holding good meaty sweet savoury flavour.
.
The preserved mustard greens infused with pork lard are soft and juicy, having an addictive vegetal earthy sweet salty flavour. The fluffy white rice with grainy sweet notes paires well with the soft braised peanuts with bold salty savoury nutty flavour.
.
The set came with a choice for the sides, so I got braised pig's skin. Loved the slippery chewy texture and robust salty savoury fatty notes.

After Rong Cheng Bak Kut Teh completed their renovation a couple of months back, the space in Midview City also offered some local breakfast and Ban Mian, converting the spacious restaurant into a cosy “kopitiam”-style eatery.
One of their new stalls sell Ban Mian, which had a seemingly clearer soup than most other Ban Mians in Singapore. I felt that the Slice Poro Belly Ban Mian (S$5.00) was overpriced, with baby-sized meatballs, petite portion of handmade noodles and a soup that seemed to lack that wee bit of umami layer to it. As a personal preference, I prefer handmade noodles with some chewiness to it, whereas this one could also do more of. On the whole, this was an average Ban Mian that can be easily forgettable.
Price: $18 with one plain rice and a small side dish.
The Sea Cucumber is a highly prized delicacy that is rich in collagen and has no cholestrol. Succulent in texture, it absorbs all the essence of the pork rib soup. elevating the taste. It's simply a perfect marriage of flavours!
First taste of the very first Sea Cucumber Bak Kut Teh in SG and as odd as it sounds, the two seemingly different elements worked really well together, with the nutritious addition providing a nice subtle sweetness to the lightly peppered soup. Rong Cheng specially sourced these quality wild sea cucumbers (黄玉参) and they are stewed in claypots for hours before serving. Lots of collagen and health benefits packed in just this one pot! Soup refills for this is unavailable as each serving is prepared individually, but they are more than happy to provide refills of its original BKT broth.
The Signature Dragon Pork Ribs Soup isn’t the overwhelmingly peppery sort, comfortable to slurp bowls of them down. However, if you do like your BKTs more peppery, feel free to ask for more. Also, I liked the cloves of garlic that you can easily crush and mix in for an added kick of heat and garlicky flavour.
Don't forget to get their $1 Homemade Organic Soya Beancurd, its super silky smooth and slurp worthy texture easily puts it up against the other popular variations and I'll choose theirs anytime! 😍
A huge thank you to Lionel, Melissa and @rongchengbakkutteh for the warm hospitality and kind invite! 🙆🏻
