Mazesoba, literally translated as mixed noodle is a new ramen wave that’s taking over the ramen scene one bowl at a time. Basically it’s a bowl of udon like soba noodles, a superbly addictive mince meat sauce, ground Saba fish, nori seaweed, green onions, leeks, chopped garlic and a poached egg. Take a whiff at it, pour in the vinegar and chili powder, toss it and slurp it. .

The result is an eruption of delicious flavours, especially so if you order the spicy version which is much recommended. The original versions are already a little spicy, but this has more kick to it, if you enjoy mala, this is for you. The table side kombucha vinegar is a must or else the whole bowl might be too jelak. Finally a Japanese style Ba Chor Mee.

ACAMASEATS & GTK TIPS💮: Absolutely have no idea what’s the “fire sauce” beneath the tonkotsu broth but what I know it’s that this bowl of ramen from Ramen Nagi is comforting at best. The Essence is in the soup, followed closely by the noodles. 🥢

An extra order of the perfectly cooked ramen egg is a must and the standard char siu. Best enjoyed hot as the noddles hold on to the broth well when slurping, in which it incorporates the air for the extra fragrance and upon finishing it, the ramen doesn’t give you a heavy food coma, you can still function if you don’t empty the entire bowl including the broth that is. 🤤

Ramen Nagi offers other ramen that’s worth a try like the “Black King” that uses black garlic and squid, “Red King” with comprises of garlic, Chili oil, cayenne pepper and miso infused minced Pork. Finally, the “Green King” which caught my attention with the fusion of fresh basil and olive oil, garnished with grated Parmesan cheese. 🔖

The addition of kimchi provides another kaleidoscopic character to the overall satisfying soba. 🤤

This is one of the many dishes that goes well with the Yakitori they serve as the soup compliments and cleans the palette well. Always a satisfying meal here at my favourite izakaya. 🔖

ACAMASTIPS & GTK💮: The complexity that Jimoto-Ya gets out of their shrimp shio ramen is pretty amazing. Shio, which means flavoured with salt not soy sauce. The addition of Tonkotsu makes the full bodied broth even richer and tastier.
Their bowls of ramen are inarguably delicious that's richly packed with Umami, the only drawback is that it might get a little too one dimensional after that.
The layer of shrimp fat on top of that bowl of ramen is one of the most delicious shrimp essence eating experience. 🤤

Not all ramen joints does great shio, is like finding a partner that ticks all your requirements categories (rare but always treasured & appreciated) The flavour of the shio is the lightest of all the ramen Jimoto Ya offers & it's a good start to wet your palette before venturing into the richer broths. 🔖

ACAMASEATS & GTK💮: Hands down still one of the best Shoyu ramen I've had so far. Complex, flavourful and has a deep intense Shoyu flavour with a richer Ebi & Tonkotsu broth as compared to their Ebi Shio Ramen. 🤤

The only outlet outside of Japan (at the moment) Jimoto Ya specialise in Amaebi based ramen with Amaebi (Shrimp) being flown in from Hokkaido. If you are into Prawn noodles & ramen, this is it. 🔖

ACAMASEATS & GTK💮: Ramen is basically like Japan's take on a fast food meal. But it's way better, tastier & definitely more attention has gone into making each Bowl of ramen. 😋

There are of course better ramen stalls out there, Kinyru is like the fast food equivalent as there are a couple of outlets mainly in the touristy areas of Osaka, Dotonburi & Namba per se. Don't expect much but definitely better than most ramen in SG. 🔖

As for the noodles, go for the hard noodles so that your noodles will not get soggy & if you are a rather slow eater. Ramen should be eaten fast thus the slurping of noodles, to cool the noodles, introduce air that actually makes it more fragrant. 😋

The Char Siu was a let down, yes Pork is king. But here kani (crab) steals the crown. This & Ippudo is the minimum standard of ramen, anything less... just pour the ramen away, you deserve better. There is no shortage of mouthwatering umami ramen in town, and a handful of mediocre ones too like Ajisucks Ramean. 🖖🏻

Hands down one of the best Shoyu ramen I've had so far. One will be surprised that how long the Raman noodles & broth stays hot throughout the meal due to the design & material of the bowl used & of course the glorious glorious oil. 🤤

Char Siu Ajitama Shoyu Soba (💵S$22.80) : 4 slices of Char Siu, Onsen Egg, Bamboo Shoot, Leek & Truffled puréed in Truffle Oil. 😋*i hope*

It's not spectacular, it's not a ramen I'll crave, it's not a ramen I'll go back for (only the one in Tokyo) The Soba was alright (could be harder), the Shoyu isn't mind blowing even it's enhanced with a touch of Truffle. But the Char Siu was not bad & the flavoured egg was good, well that's the best, nothing's better than an Onsen egg, the best invention in the culinary world oh you beauty. 😍

ACAMASTIPS💮: Looks like I have to head to Tokyo for the one that actually earned the Michelin Star. The Tokyo outlet actually braised their Char Siu in red wine, the Soba is a mix of 3 kinds of flour & you better get in line, otherwise it's momofoku you Starlight. 🖖🏻
