Interesting way of ordering as you need to head over to the ordering kiosk around the stall to make your order, then proceed to the counter to make your payment and collect your queue number.
A big bowl of beef la mian here with tasty soup. Topped with pieces of beef.
I love HUGE DUMPLINGS, and couldn't resist getting their 红油抄手 Poached Sichuan Dumplings in Spicy Sauce despite being full. The wrapper might be a lil thick, but these wontons are packed to the brim with flavourful chives and pork filling & bathed in the spicy and tangy concoction of Lao Gan Ma/vinegar.
IS THIS LIKE BISHAN'S BEST (not-so) HIDDEN GEM? Heard rave reviews on the handmade noodles Shi Xiang Ge 食香阁 @shixiangge on the 2nd floor of Bishan Bus Interchange and decided to try their Braised Pork Knife Shaved Noodles 刀削面. The portions here are HUGE, but these freshly made knife-shaved noodles are springy with a beautiful chew! Even on 小辣, their mala broth was numbingly spicy and addictive enough to get me slurping together with their noodles on a rainy afternoon. If you are more spice tolerant, there's more lao gan ma at the counter for that extra heat.🔥🍜 There are other variations like the Tomato and Egg version (which Friend A ordered), but I prefer having these thicc cut noodles with soup.
Hot take: ragù pasta is just Italian zha jiang mian (minced meat noodles). Think about it folks, both involve a meaty sauce that flavours and lubricates springy noodles. Now for my common knowledge take: Shi Xiang Ge at Bishan Bus Interchange serves the best zha jiang mian in all of Singapore.⠀

Six bucks flat will get you a pretty hefty bowl of freshly made la mian with a decent amount of minced meat sauce ladled over it. The minced meat is reinforced by little tofu cubes, turning it into an extra meaty mapo tofu. The black bean sauce that the minced pork & tofu had been simmered in was stunningly savoury, and the deep umami of the fermented black beans were balanced out by subtle sweetness and just a little hit of spice from the chili oil added into the noodles.⠀

The mouthwatering minced meat sauce was more than sufficient to coat every last strand of handmade la mian, and a thorough tossing coats the springy, thin noodles with all that unctuous deliciousness. Every element in this simple yet stellar bowl of noodles were perfect, from the marvellous meat sauce, to the perfectly cooked & QQ noodles, and the julienned cucumbers to offset the rich, salty flavours of the meat sauce.⠀

Shi Xiang Ge’s Minced Meat La Mian doesn’t mince around, it’s a straightforward yet sublime bowl of comfort food that’s guaranteed to satisfy your palate, your stomach and your wallet.
As usual I always order my fav, Mala Braised Pork Intestine Noodle.
The portion very generous but we always add Szechuan Dumpling in Spicy Sauce. Plump dumplings wrapped in thin skin and fill with generous meat and veggies.
