A combined creation by both chefs, this was a highlight of our meal! The seared scallop sits with a mildly sweet smoked carrot and orange purée, white wine reduction and caviar, paired with such a well spiced Tandoori black cod. The seemingly different elements worked harmoniously well together.

This Smoked King Salmon with Garden Tomato and Roquefort Salad was only available on the collaboration’s opening night of 14 July 2022 as a special additional starter. Pity it was for one night only because we really enjoyed it! The cured salmon was lightly smoked and matched with fun bursts of flavours from the sweet oranges and tomatoes, and the sharper creamy blue cheese. The cook on the salmon was on point too, tender and flaky.

A collaboration you should catch! Tiffin Room of Raffles Hotel Singapore and Meatsmith Little India are back following last year’s success to put together a four-hands menu that’s available from now till 28 July 2022. We saw lots of skillful play of flavours, textures and spices throughout the meal.
Starter was this trio of Papadum with Ikura and Creme Fraiche, Smoked Feta with Watermelon, Potato and Cheese Croquettes with Caviar and BBQ Mustard. Happy to have Meatsmith’s Ikura Papadum again after so long - pop it in a mouthful and get the burst of briny ikura with rich tangy crème fraiche on a crisp papadum. The Smoked Feta with Watermelon was a refreshing bite, but the Croquette paled a bit in comparison.
Inspired by Chef Kuldeep Negi’s personal travels to Rajasthan, this limited-time menu (From Appetiser, Main and dessert) is boasting flavourful dishes unique to the regal state, by using simple ingredients such as milk, yogurt, lentils, and chickpeas.

My favourite will be the Banjara Gosht, the lamb chop tender and not gamey, served with tasty gravy.
