The egg shells are filled with a custard reminiscent of chawanmushi (Japanese Egg Custard) It tastes nice though the texture is far from silky and breaks a hole in the pocket.

I find it too tender and spongy, to the point of having little texture. Could be better if the meat has a slight bite to it but sauce and potatoes are nice accompaniments. I find the palace promising...though still rough on the edges, which I think the chefs could work on. *
