Revolver’s all-new flame-kissed à la carte menu is sure to excite those craving bold, vibrant flavors. Kick things off with small plates like their signature Fresh Delhi Paneer, Burrata Tartlets, or Charred Fennel to awaken your palate. For mains, share a few hearty choices like the Hamachi Collar, Whole Baby Chicken, or Spice-Rubbed Cauliflower—each dish brings a unique twist that’s made to be savored.
Their flatbread lineup now features seven toppings, from chickpeas to butter chicken and Mysore pulled lamb, making it hard to choose just one. And for dessert, interesting pairings like Dark Chocolate with Chilli Mousse offer a rich and satisfying finish to your meal.
Helmed by Executive Chef Saurabh Udinia, Revolver is an open-fire grill restaurant that marries Indian cooking with international flair and ingredients. Dishes cooked over custom-built wood-fire and binchotan grills, and in a gleaming hand-beaten tandoor, their new seasonal Summer’s Bullet 10 menu is available from 1 July to 30 Sept 2023.

1️⃣Bullet 10’s snack box, which includes a Scallop Tartlet that sings with the flavours of pani puri and Chettinad pulled duck on steamed dhokla.
2️⃣Crisp Japanese turnips are transformed by the fire, yielding lush, velvety flesh accented by the grassiness of artichokes and coriander seeds.
3️⃣Paneer, flown fresh several times a week from Delhi, is served on a bed of tomato relish and topped with a cumin-spiked onion chutney sweetened by long, slow heat.
4️⃣Spanish Dorada is kissed by the fire and served on a bed of toasted fresh coconut and black pepper.
5️⃣Australian rock lobster is marinated with a traditional Goan Recheado Masala, grilled and served with Goan red rice.
6️⃣Iberico pork pluma takes centre stage this season, dressed with a piquant sweet and sour sauce.
7️⃣Revolver’s signature Kulchettes are stuffed with smoked Scamorza and topped with tandoor-roasted pulled quail.
8️⃣For dessert, Chef Saurabh celebrates the natural charms of the lychee with lime and lychee sorbet, coconut espuma and popping candy.

For the Experience (8 courses, $229) dinner menu, the first shot is fired with the Snack Box that comprises of the bite-sized Curd Rice Caviar Poppadum, Prawn Balchao Monaka, and a Foie Gras Corn Sphere. The fiery cooking style builds up the excitement even higher with the signature Paneer that came right out of the tandoor, and served with a cashew and basil pesto.
The highlight of the meal for me was the Hokkaido Scallop that has been fire kissed by the wood-fire grill, and paired with a moreish spiced coconut gravy with Indonesia mud crab. What followed were the Boston lobsters cooked in the tandoor before a glaze of lemon pickle and grilled spring lamb served with korma. To fill you up, the Kulchette of flatbread is served with Mangalorean-style ghee roast wagyu and bone marrow for the perfect richness with every bite. The meal ends with the Textures of Alphonso with yogurt sorbet and popping candy.
Besides dinner, Revolver will also be serving the Five-Course Lunch ($119) starting with the Japanese aubergine with tamarind mash and the perfectly cooked Australian quail with wasabi yuzu aioli. The main of Spanish sea bream with gujarat kadhi is simply chef’s kiss while ending the savoury with the Comte-stuffed kulchette with spiced pea and paneer mash topping. Lunch concludes with the refreshing Fresh Peach & Shrikhand.
