This pigeon is from Brittany (more tender and fleshy), pan-seared, then slowly-roasted by drizzling oil all over in the pot.

Then, the bird entered the kitchen, and came out in a plate reposing on its own roasting jus, accompanied with beets and hazelnut crumble.

Corn fed chicken from Landes, green peppers, mushroom, cumin and carrots. We were served two cuts of meat: breast and thigh. While the thigh was quite bony (which was quite surprising), the meat was more tender and flavourful.

I thought last year's presentation of this chocolate dessert was a lot prettier. Nevertheless, got sent to chocolate heaven right away. #eatdirtytraindirtier time to work the core now!
