Traditionally, eho maki is eaten on Setsubun, the month of Chinese New Year. It must contain seven ingredients as the number seven relates with the Seven Deities of Good Fortune called Shichifukujin. Seven fillings are traditionally rolled in, representing good health, happiness, and prosperity, and rolling the fillings means rolling in good fortune.
