Fried Hokkien Mee

Fried Hokkien Mee

Dedicated my love toward all kind of wet or dry hokkien mee

This deliciously great plate of wet-style Hokkien fried prawn noodles is tastisfyingly eggy, garlicky, creamy, umami-rich, and sweet-savoury, with a distinct but moderate wok hei. Generously served, it includes thick white noodles, yellow noodles, prawns, sotong, pork belly, eggs, chives, garlic, homemade prawn stock, pork lard, lime, and belachan chilli.

The yellow noodles were prepared perfectly, free from any alkaline flavour, and paired beautifully with the white noodles for a harmonious, slurpy texture. The $6 portion comes with three fresh, bouncy, medium-sized, de-shelled prawns. The addition of chewy chopped squid and thin-cut pork belly enhances the umami depth, though slightly thicker cuts of pork belly would have given a more tastisfying texture. I appreciated the ample amount of eggs in each cooking batch, lending a consistent creamy, eggy mouthfeel.

The garlic, though a simple ingredient, adds a fragrant and complex flavour. Its taste is quite noticeable, making each bite delightfully garlicky. This is by far the most garlicky Hokkien mee I’ve had, and I love it. The homemade prawn stock infuses the noodles with a deep, secret essence that’s essential to the dish, reduced to a rich, gravy-like texture that clings to each strand.

The dark golden-brown pork lard is freshly prepared and cooked daily to a satisfying level of crispiness, adding a great texture to the dish. However, the taste leans slightly towards a charred note, possibly due to cooking it at high heat instead of a more controlled, medium-low heat. While high heat speeds up the process, it can compromise the quality and precision of the final colour and taste. To improve it, maybe a lighter golden-brown finish achieved with more careful browning could perfect its flavour without the slight over-char.

The lime provides a nice tanginess, and the belachan chilli, though watery in consistency, packs a strong tangy-spicy punch.

Can't manage a whole pot of stuff? Just get their Hokkien Mee ($8.80). Confirm plus chop, you will not be disappointed if you like wet-style Hokkien mee. The Hokkien mee is full of wok hei, comes with three fat and juicy prawns, an abundance of fatty pork, chewy sotong, crispy pork lard, and a raw egg for moonlight effect. The chilli provided is damn shiok, hot, and spicy enough to evoke your senses without making you sweat. The slurpy noodles are handled properly, leaving little trace of alkaline taste, and they really absorb the stock well.

I've been savouring their Hokkien Mee for years, watching generations pass down their culinary artistry. They still whip up a delicious Hokkien Prawn Mee—wet-style and savoury. A standard plate now costs $5, and it's quite slurpy and flavourful with a generous portion. Only critique: wishing for a bit more prawn and squid, but overall, it's delightful.

Sometimes, they have crispy pork lard on the counter for a noodle topping. Do add the sambal too!

They also serve Char Kway Teow ($5), which lean more toward the sweet side. The distinct sweetness from the sauce shines through, cooked with cockles and dried sausages. Light in color, moderate in taste—pretty decent, but my heart still leans toward the Hokkien Mee.

Hokkien Prawn Noodle($5)😋
Recently discovered they have a branch nearby, in the north, no more long travels. Hehe.
Aside from their less-than-friendly service, the noodles were delightful. Cooked in the wet style, every slurp immersed the mouth in flavourful broth. The noodles were silky and slippery, making it easy to gulp down in just a few bites. Although the portion may seem substantial, it disappears quickly. Perhaps a larger plate would let you savour more. The prawns were deshelled, swimming in an eggy and savoury broth. That sambal added a brilliant kick, elevating the taste. The thick bee hoon to yellow noodle ratio was about 3:1, and no odd taste from the yellow noodle - just genuinely tasty noodles.

Hunger leads one to make an impulse decision for buying a gignatic plate of Premium Fried Hokkien Mee which costs $25!!!😮 Wow! Crazy as it is, this huge plate can feed 2-3 pax and send you to food comatose later.
Huge portion of yellow noodles and thick bee hoon cooked with savoury homemade prawn stock, lala, 5 big prawn, squid, roasted pork and slipper lobster. You could literally say I brought a wok of hokkien mee.🤭
Slurpy standard noodles taste, creamy zhup and normal wok hei but will be better if wok hei is stronger. Slipper lobster meat was easy to come off from the shell, big prawn was fresh and tender but you got to deshell your own, roasted pork was chewy, fatty, juicy and heavily spiced, and lala, squid were succulent. With the squeeze of limes and moderately citrusy belachan chilli, it brings the in between wet and dry hokkien mee to new heights.
For the $8, more noods than the $5 one with 4 big prawn and squid in savoury stock.
For the $5, its already big enough to make you food coma plus comes with 3 huge fresh prawn and squid. Go for this unless you want to try a bit of everything then $25 it is.

Although price have increases by 50¢ but I don't mind it all cause this wet style hokkien mee is really tasty. Consistency still as great as I remembered to be and that super spicy chilli. Woot! Slurping down to my heart content.
They are super near NTU too. Across the bridge from yunnan garden or behind extension only.

This got to be the Most Wok Hei Fried Hokkien Prawn Mee($4.50) that you can ever find!🙀
From the gooey & slurpy looks of hokkien mee with tiny char bits to the taste of it, every aspect of Wok Hei was distinctively solid.🤤
The strong char aroma that was infused to the thick yellow and white noodles basically masked away the alkaline taste.👍
Their noodles style leans toward the team wet hokkien mee side as it was soaked up with  a good amount of umami gravy.
Crispy pork lard, chewy pork belly, chive, sotong, prawn and yummy eggs were cooked together with noodles. Not forgetting the most important homemade stock to give this wonderful flavour to the noodles.😋
The chilli here was notable as it is powerfully spicy and paired really well the noodles. Squeeze the lime over the noodles and enjoy it.

Hokkien Prawn Mee($4)😋
Everyone love to eat Hokkien Mee but not many knows the history of it. Neither do I, so I done some research about it.
Did you know Hokkien Mee origins from Fujian province, China?🤔😮
There are a few variation to it but I'm just going to introduce you the Singapore style. It was said to be created after World War II by Fujian Chinese sailors. As during the coolie days, after a long hard day labour, they will come together along Rochor Road and cooked up surplus noodles from noodle factories over a charcoal stove.
Today, we have mutliple style of it which differ from the noodles, ingredients and/or flavourful stock used to create this delicious dish.
History has been said and now to intro you what I had a few years ago from Tian Tian Cooked Food and I'm glad to say they still have it the last I went recently. #teamwet hokkien mee FTW!🔥
Slurp Slurp!
Slurpy thick yellow and white noodles drowned in umami savoury stock cooked with beansprouts, spring onion, fresh succulent chewy sotong, peeled tender prawn and creamy savoury eggs. With a squeeze of lime and a touch of sambal to truly enhance the flavours.
