A reinvention of Basque cuisine and this was something new to me. One of the highlights here is the signature oxtail bomba rice - Angus oxtail cooked with rice and topped with a confit quail egg yolk. The ingredients are fairly simple but the flavours were rich and intense.

Angus prime rib cooked medium rare, mash and beef jus. It’s not the most elaborate of beef dishes but this was delicious in every bite.
