Must Try Ramen Places In Singapore
I have always wanted to try Kajiken but the thought of jostling with office crowds during lunch hours does put me off a bit — which is why I knew I had to head to the branch at Square2 when I saw fellow Burpple Tastemaker Ice Blossom's post about this outlet.
Opted for the Mazesoba Nagoya Style but added Mayo and Cod Roe at an additional charge of $3 — the addition of mentaiko made this pretty much of a umami bomb on its own especially with the seaweed nori all with the chewy noodles and a little bit of spice from the spicy minced pork. It's Japanese-style Bak Chor Mee in a certain sense if you think about it — break the yolk, mix all the spring onions, seaweed nori and spicy minced pork in; even as a non-ramen lover, I am impressed! Would totally be back again in a single heartbeat with some friends next time!
PS: They do offer rice on the side to mop up the remaining sauce and would usually ask when one is seemingly near finishing the bowl. Green Tea (hot or iced) is also served complementary here; pretty much of a good deal.
Not having been here in a long time, I was curious to see if there'd be any changes to my usual order: the Spicy Ramen. Well, they now have a version that automatically includes an "Ajitsuke Tamago" (ramen egg) - which is what I promptly got. And I have to say, the egg was done perfectly: medium soft all over with an oozy slightly-more-than-half-cooked yolk. I was pleased to find their spicy soup still reigns as the hottest one around, and their grilled chashu retained its kickass-ness. The only glitch was the noodles - it tasted very floury tonight. In fact, that flouriness kind of spread into the soup too. I sure hope it's a one-off incident and NOT the new normal!
The Singaporean that I am got super curious about the daily long queues at Buta Ramen; so here's my first go at it. The Spicy Boss Rib Ramen ($14.90) was a bowl of well cooked noodles in a pretty decent tonkutsu broth, with a side of grilled pork ribs topped with yakitori sauce. With that quality at such a reasonable price I can see why it's so popular with the working crowd.
The pork bone broth here is quite light in flavour compared to other ramen shops like Santouka and Keisuke, which is why I still prefer the latter two for their ultra-creamy quality although I can see why some would find Suzuki's easier on the palate.
I love how everything is customisable, from the texture of the noodles, the intensity of flavour of the broth, the toppings, and even the type of cha shu – I liked the pork loin better than the belly. And don't forget those free-flow hard-boiled eggs (heaven with lots and lots of Kewpie!) and complimentary sides like beansprouts and Japanese potato salad.
Still my favourite ramen locally despite more and more specialty ramen stores sprouting around Singapore in recent years. The pork cheeks are fatty yet not too greasy which gives it great flavor and texture and the soup is well balanced, neither too bland nor too rich. This will keep me happy while I patiently await Ichiran Ramen to open a branch in Singapore. 👍
Ramen soup is poured into a preheated 300 degrees hot stone with noodles and ingredients inside. Once the volcano has erupted, it is supposed to consume right after. But beware of getting your tongue burn from the smoking hot miso soup! It's definitely a unique experience to visit such authentic restaurant. Visit them at Novena Square/Liang Court!
Have been going to tampopo for a long time now! Love their ramen and tonkatsu, consistent standards and my go to for comfort Japanese food!
The first time I had a taste of ippudo ramen was many years ago at Mandarin Gallery and I remember not being impressed. This time though, I was taken aback by how rich and flavorful the broth was. I usually refrain from slurping up too much soup but this was just too good to resist, I HAD to finish every drop of it. Sorry the picture doesn't quite do justice; I was too hungry to take a proper shot!
Refillable boiled eggs and flavoured bean sprouts. Add all toppings is yummierrrrrr. The queue is so long and the place is too small.
Get this if you enjoy a garlicky stock! It's a good alternative to my usual pick 13.
