Kanada-Ya is a Japanese Ramen Restaurant originated from the city of Yukuhashi, Japan that specialises in authentic Tonkutsu Ramen, founded by Mr. Kazuhiro Kanada in year 2009. Its breakthrough recipe developed by Mr. Kanada allowed it to gain great population and expansion to Hong Kong and all the way to the United Kingdom in 2013, and is considered one of the best ramen shops in London to date. Specialising in authentic Tonkotsu ramen, all noodles are made on site with a special machine, imported from Japan, that uses a very specific brand of flour, enriched with the right protein content and alkaline salts to produce a bouncy, firm noodle capable of standing up to the rich broth.

👍One of the best MazeSoba I had and at just $12.90‼️

I love that it’s super loaded with different textures from chewy noodles, crispy scallots, runny egg, minced meat, crunchy spring onions - mixed them all together it’s just slurpy delight of flavors + hint of mala spicy!✨don’t worry not too spicy at all just nice👍

If you want something soupy, can go for Mala Tonkotsu Ramen which comes with sliced tonkotsu pork and favorite ramen egg! the broth is light which i prefer, not too heavy with mala flavor but still drinkable✨

Lastly pair them with Mala Chicken and Mala Gyoza which is super spicy compared to the noodle dishes😂 like legit will numb and 💯shiok!

Kanada-Ya recently released their Mala series, which includes soup ramen, Mazesoba as well as some side dishes. We tried many of them and they were delicious ~~

The Mala Tonkotsu Ramen ($16.90) was indeed quite spicy, with much of the spice kicking in at the back of your throat. The pork broth itself was very lovely, with deep pork bone flavours almost shouting in your face. Noodles were alright, thought I wish they could be more al dente. Do note that it tastes more like spicy tonkotsu than mala! Definitely a decent ramen to get for spicy lovers.

I actually love their Mala Mazesoba ($12.90) more, as the mala flavours are more pronounced. The noodles are much chewier here and umami flavours from the meat were strong too! Definitely a spicy bowl but will be addictive to some!

Everyone, we have come to the best item we had ordered, which is their Mala Fried Chicken ($8.90). This came in huge chunks, and they were so tender and juicy. Fat from the chicken almost dripped down as I bit into it! It was well seasoned all the way through the chicken meat and the mala paste did well in enhancing the flavours more.

Honestly I'm not a big spicy eater, but the normal variations of their dishes are good. Definitely coming back for their non spicy variations for my ramen fix! Thank you @kanadaya.sg for inviting and for the food!

Broth was not too heavy on the porky taste, very creamy with a milky consistency!

Sauce was boasting a fragrant garlicky smokiness, more robust in flavour.

Chicken thigh was meaty and juicy, perfectly fried with a crispy skin and a squeeze of lemon helped to cut the grease 😋
