The beef shank has too much bite, and surprisingly the original comes w nothing else except shank. The gravy is quite light, and is familiar yet different. It's somewhat similar to a Thai style in the sweetness, but otherwise quite different too. It's got the darkness but not as heavy on the palate as you expect
The chili works very well w the bowl to add on zest and heat without much else, so it doesn't detract from the dark flavours.
The tendon was absolutely magnificent, incredibly tender and that's why it's so expensive to add on
Soup was super, it's boiled w beef bones and meat so you really get the depth of flavour hardly found anywhere else. Unfortunately with this kind of broth there's always the problem of sourness, esp after you let it sit awhile.
Overall quite good, spam tendon I guess, avoid the meats, and then it would be worth a try
So delicious and tender. Goes so well with rice. I will definitely order again in a heartbeat.
You can really taste the beef and it's so tender but this not your traditional Chinese style beef noodles. It has a little east meet west flavour to it. The stall owner is very friendly, could see that he has that passion for cooking!

Beef Brisket Noodle - $7.50

Comes with thin yellow noddles which is not what I love but pairing with the chilli makes it more acceptable. The beef brisket is not that soft, still retains that tender texture. I would hope there’s a couple tendon added in to my bowl of Beef Brisket Noodle. A small bowl of beef soup is also given

Amongst vendors of the bustling Old Airport Road Hawker Centre lies this gem waiting to be uncovered. They serve cuts from the cow of all sorts; muscle, tendon and brisket with your choice of rice or horfan noodles. This was the melt-in-your-mouth braised Beef noodles that's tossed in a teriyaki-like sauce, served with raw yellow onions and bean sprouts for some crunch and loads of deep fried shallots for that extra pop of fragrance and sweetness. Fried-friggin-shallots FOR THE WIN.
Quite honestly, for the amount of meat in the medium-sized bowl that I ordered, 5bucks is a sure steal.
