Since the early 1980s, Ng Guan Chye starts before dawn, thoroughly cleaning and preparing the pig offals for braising, with ingredients simmered in soy sauce and herbs non-stop for over 3 hours.
.
The odourless braised intestines, both small and large varieties, have a tender springy chew to texture with clean savoury salty herbal earthy flavour.
.
The gelatinous braised pig's skin was shiny and soft, with salty savoury herbal notes. The tender braised pork belly carried meaty savoury salty flavour.
.
The generous bowl of soft silky kway teow / rice noodle sheets in the warm soy soup / broth carries strong herbal earthy salty grainy sweet flavour, while their chili has a nice tangy zesty sour spicy kick.

🍴One of the best kway chap we’ve had in recent memory. The different cuts of meat were well-cleaned and thoroughly soaked up the braising sauce. We especially loved the chewy pig skin (with little to no fat), big intestines, and soft, juicy tau pok (beancurd). Paired with an extremely flavourful herbal broth and silky rice noodles, it made for a highly satisfying meal. Their preserved vegetables were also well-executed, providing a salty (but not overly so) balance to the meal. If nitpicking, we did find some of the duck meat cuts to be on the tougher side.

U can't mix and match the ingredients for the small set.

Everything here got a little bit of chew, from the kway to both intestines and the pig skin. Most of the items are really well braised, particularly the pork belly. Kway soup was rather thick compared to normal. Chili was sour and spicy w little body but it does its job perfectly.

Solid set of kway chap

Ordered the two pax set for $9. Price is reasonable. One bowl of kway is certainly not enough. Love the chlli too.
