Toto fish, eat liao win toto? Jokes aside, this fish set is quite valuable. As shown in the pictures, the set includes a generous cut of fish head extending to at least a third of its body, a small cup of steamed smooth custardy egg drenched in savoury light soy sauce, and a bowl of white rice.
When it comes to judging freshness, simple cooking is the best test, hence the Cantonese style. So, is it fresh? I’d say moderately fresh. Maybe because it was evening, the freshness had faded slightly, but it was still good. They clearly did their best to maintain quality. Sources say their fish is delivered fresh from Kukup, Johor every morning.
The flesh was meaty and easy to separate from the small bones. The cheek was smooth, the head a bit boney. The light soy sauce with garlic bits and coriander lifted the flavour and aroma nicely. The sauce paired well with the rice, which was average on its own.
If you’re not into fish head, you can top up $1 to switch to the tail section for more meat. Add-ons like prawn and lala are available too.
