this si chuan styled pork ribs gave me fond memories of my beijing stay last year.
they boil the pork, braise it and then fry the full slab. ending of with si chuan sauce.

Authentic Sichuan spicy and numb flavour that comes from natural ingredients. Love the mix of fish, fungus, tofu and Chinese lettuce. Yet it would be so much better if they used fish other than frozen dory. Something flaky and fresh would be perfect.
This is our favourite tonight. Fragrant glutinous rice, tender and soft meat, layered texture and flavours... all nice things served in one steamer.
