Noodles firm, though a little underdressed; the real star is the mince studded with so many pieces of fried lardon.
Remembered having this a couple of years ago at Food Republic Parkway Parade when this wasn't available on the menu (at least from what I recall) of their Abalone Noodle outlets (the Parkway Parade stall was named Lam's Salt Baked Chicken then). Quite glad to have found this at Food Republic Causeway Point for it was what I remembered it to be; succulent, juicy chicken with both meat and skin absorbing the salty goodness for a savoury punch of flavour that wasn't overwhelming. Absolutely in love with the chili on the side; tangy, raw and spicy so much so I finished a substantial amount of rice just by enjoying every morsel with a little chili to go along. Definitely an option for me the next time I choose to dine at the Food Republic near me!
Had to give this a try at the nearest outlet to me after seeing Burppler Veronica Phua's burp. Sure enough, I was impressed by it's quality; sufficiently "q" noodles, thick sauce that was savoury and mildly spicy without being overwhelming. And while most mock abalone are tough and rubbery, this was chewy yet soft. The plus point? The molten egg which looks like a replica of those eggs from Ramen places; a good enough option when it comes to airconditioned commercial food court dining!
