We tried the Truffle Yu Sheng from Hotel Fort Canning yesterday and we really enjoyed it! We loved the addition of truffle to the traditional yu sheng, which added dynamism to its flavour profile with its earthy aroma. It created such an umami bomb when combined with everything else that left us wanting more! And instead of just the usual crackers, this one comes with deep fried enoki mushrooms and fried fish sticks for a satisfying crunch. It’s a great yu sheng to get for truffle lovers and foodies alike!
This unique yu sheng comes in two sizes, a perfect fit for both small and large families. The smaller variant can feed 4 to 7 pax while the larger variant can feed 10 to 12 pax. This locally-inspired flavour came complete with chicken otah stuffing and a laksa gravy on the side. So while the skin of the turkey is stronger in the flavours of otah, you can dip the inner part of the turkey with laksa gravy, and this reminds me of the insanely shiok curry chicken noodles that we love.

In terms of preparation, the turkey is first given a rub-down with aromatics like fresh galangal, lemongrass, turmeric, ground cumin and ground coriander, then seasoned overnight before it is slow-roasted to a glorious brown. At the core of the turkey, the usual mackerel fish Otah is replaced with a homemade chicken variation coupled with chestnut stuffing. This combination is flavoured with a house blended rempah. Basmati rice scented with a heady mix of spices then fills the turkey, while bits of dried cranberry and festive nuts add textural contrast.

The culinary team from Hotel Fort Canning have raised the “porksperity” ante by incorporating the prized Prosciutto into a fruit-centric Yu Sheng dish to represent the ushering of wealth and riches. The creation perfectly encapsulates elements of the east and west culinary influence, resulting in a melange of delightful colours, flavours and textures.
Hotel Fort Canning's new creation this year is this yusheng that came with mala sauce instead of sweet plum sauce. We were initially worried that it'll be too spicy, so we only poured in half the mala chilli. Turns out the spice level was well-calibrated, and the yusheng turned out to be fragrant and tingling without being overly spicy.

Besides this ‘Ma-Luck’ Fa Cai Yu Sheng, they are also serving other best-sellers like the Signature Fortune Salmon Yu Sheng and Blossoms of Abundance Treasure Pot. The sauce comes in two levels of spiciness, moderately / extra spicy, accompanied with fresh salmon slices, carrot, white radish, green radish, red cabbage, pickled vegetables, and topped with fresh green papaya and steamed lotus roots. Peanuts, wild rice and golden crackers (pok chui) are added for crunch.
