The rice was somehow not harder than normal even though it seems like there's more integrity(I think it's less cooked but it doesn't taste raw at all)
There's also a unique taste to their base, it's got a medium body but it doesn't taste too seafoody, so not sure what's in there.
Overall it's fine but not superb, there's barely any crust
Australian lamb, the flavour is pretty good and the texture is unique in that thered some bounce, but there's no crust at all which is disappointing. The sweet raisin sauce was alright, veggies were nice and the potatoes were crispy
However for this standard this is severely overpriced, even if it's served in a restaurant it shouldn't command more than 30++, much less w this kind of plating and atmosphere
they're closing end of the month for good
It's alright I guess but somehow it seems like something you can easily make at home, the flavours were very normal and expected
Yes, we tried more than $1000 worth of different types of caviars that evening, but our key takeaway was the new friends made that evening. Naturally, after a few bottles of the premium wines, champagne and sake courtesy from @dq_sg_ken, things got even more fun.

Now about caviar, if you ask me which is my favorite, for me it's no doubt @caviar8gems top grade No 8 Royal Beluga, but that's also the most expensive. For the optimal quality-to-price ratio, I'll go for No 2: Superior Oscietra, which I heard is also their best seller.
It's like a lobster thermidor, but they use light tasting cheeses. This is because Don Quijote brings in live lobster for this dish, and in order to focus our taste buds on the natural sweetness of the fresh lobster, they went light on the cheese. And wise choice, the lobster flesh fell off easily from the shells, while the meat from the claws still has the taste of the ocean.

Ever had pork cooked medium rare? This isn't just any Iberian pork. Owner Ken explained to me this is a very premium grade of Iberian pork exclusive to Don Quijote. It's so clean that it can be cooked medium rare, and that's when I tasted how a good cut of premium pork could taste like - sweet, nutty, and not gamey at all.

To top it off, they used binchotan to grill it. So it came with a lovely aroma, and slightly crisp edges.
