Love the aesthetics and flavour of the dish, and the thickness of the pork collar. Spiciness is pretty mild as well, good for people with low heat tolerance like me.

Colour me festive, thats what I felt when i sank my mouth into this seasonal special at Fatcat.
Gingerbread waffles, you swept me off my feet. You are a genius creation and every bite of you was just mouth after mouth of Christmas. You were paired so well with the cinnamon powder and the tart cranberry sauce which reminded me of the staple cranberry sauce at Thanksgiving.
I have much to give thanks for savouring you oh so deliciously. And paired with the explosive Smoked Peppermint ice cream. No, you are not going to get the run of the mill Peppermint Choc Chip ice cream you see everywhere. The minute I sank my mouth into you, I immediately thought of "Spearmint", wonderful refreshing spearmint which evoked the Christmas spirit in me. No, you do not taste like toothpaste or Listerine. You are so much more precious than that, baby. You are a genius creation.
Black Truffle Risotto ($28) - Essentially oyster mushroom, de-boned chicken wing, parmesan chip and raw quail's egg yolk.
This dish was unanimously agreed on as the best dish at yesterday's tasting. The risotto was moist and yet packed a punch from the truffle flavour and seasoning of the risotto itself. The texture was enhanced with the crunchy oyster mushroom and the quails egg.
Just think of this dish as really appetising comfort food which you will eat and unconsciously smile to yourself. That knowing smile from satisfying your palate.
Before trying Paddy Hills' rendition of the titular truffle fries, i was wondering who will actually fork out $26 for a plate of truffle fries.
Turns out I was so wrong. This baby right here looks innocent enough but is actually potent and packs a punch. Paddy Hills uses black autumn truffle from Umbria, Italy and all truffle dishes in the Xmas menu comes with shavings of 5g of the black truffle!
I love medium cut fries like this and they actually managed to stay crispy through our intensive photoshoot! Love how the truffle attacks my palate with its pungent but not pervasive fragrance.
$26 may seem like a bomb to most of us but the portion is so huge that this can feed 6 happy mouths. The incentive of black truffle just sweetens the deal oh so nicely.
Xmas Muffcake - Berries, mint ice cream, green soil and magic balls
It is definitely beginning to look, and taste like Christmas! First time trying the muffcake here so this dish was an eye-opener for me.
Red and green muffcake, topped with square dollops of mint ice cream and aesthetically decorated with berries and rainbow sprinkles. The mint ice cream is definitely the winner here, shining on its own and held the fort here. The mint element was sharp but not overpowering, and each bite brought me closer to Christmas.
The muffcakes - essentially hotcakes was fragrant and crisp at the edges. The batter gave life to the entire hotcake being sweetly fragrant.
This dish is part of Paddy Hills' December Christmas menu and will only last for the month so don't hesitate to drop by!
The dish was so nicely presented to begin with: 12 thick and juicy glazed beef slices atop fragrant sesame rice, sprinkled with truffle bits and topped off with a lovely Onsen tamago egg just made me fish out my chopsticks all that much faster. The beef slices glowed a healthy pink, its barbecued aroma wafting through the air. The truffle fragrance was definitely prevalent here without being overwhelming. Putting the beef in my mouth, I was bowled over, and that is an understatement to say the least. The beef was so tender, brimming with its oils and melted so deliciously without needing to chew much.
The truffle kicked up the flavour by a notch and this beef has to be the next best thing I have tasted behind Wagyu beef. It is good to note that the beef used here is prime Angus beef, and I cannot believe this bowl of heavenly goodness costed only $14.90 during lunchtime. I burst the Onsen tamago whose yolk oozed thickly and lusciously and I spread the yolk all over the beef slices. I am currently drooling while writing this.
How do I begin to describe this dish? Lets see. For starters, the tiger prawns were fresh, nicely shelled, and had a crunchy bite. The chilli flakes on the pasta were slightly overwhelming for me as I have a low tolerance for heat. But it did make the pasta more fragrant.
My favourite is definitely the mentaiko sauce, nicely torched and had a nice char fragrance to it. The pasta was cooked al dente, so springy and had a good bite. I squeezed the lemon and lightly drizzled its juice for a slight tangy punch. After mixing all the ingredients together with pasta, the flavour come full circle.
Overall I enjoyed this dish probably more than I should as I wiped off the sauce completely the bowl.

Hainanese Chicken Rice Risotto - soy braised chicken, ginger risotto, sriracha vinaigrette, nai bai, fried shallots, chicken skin and spring onion.
This brilliant creation right here touches on what strikes us Singaporeans - chicken rice. There is not one element of this dish I did not love, well except the cabbage, but that is because I am not a veggie eater.
The risotto broth was flavourful and well balanced. The chicken chunks were sizeable and tender, and although I am not a fan of spiciness, the chilli vinaigrette tasted so much like the chicken rice chilli but only more empowering. I loved it so much. The crispy chicken skin added a good texture too.
Overall a must try for first timers at Stateland and also if you are a fan of quirky fusion creations that work.
**Another thing to love, a complimentary drink is given with every dish on the food menu ordered.
Literally will whack every food I see in lieu of outfield (?!?!) next week. Sighpie.
