Although the powdery mantou was more playground than beach, the soft shell crab wore its tempura-style armour with a warrior's quiet pride and the chilli crab ice cream was tomato hearty and intensely rich, its playful pincers delivering a numbingly passionate French kiss which the back of your mouth would not withdraw from. 4/5

As long as any diner at a table opts for the 10-course $168 Experience Menu, every single person at the table is required to order the same menu as well, and this policy is stated - albeit in a reasonably ambiguous manner - on its menu that is also available online.
After we were informed of this policy by a tall, looming gentleman who facially and tonally took to our confusion like a person who was realising that his Birkenstock had just made contact with fresh sick which a shihtsu had left on the floor, we needed time to convene and make an informed decision as to which menu to go for at that moment - there were several lunch and dinner menus available with no a la carte option, and some items overlapped while others were exclusive to certain menus so this was a delicate exercise in planning and maximising our coverage of the full range that Restaurant Labyrinth has to offer.

However, within the span of five minutes we were asked no less than four times if we were ready to order, which was frustrating and pressuring in manner of rice cooker, fast elevators in super high-rise Toa Payoh flats etc.
The older couple behind us were audibly and visibly dismayed by the policy as well, and we could hear their heated parley with said Birkenstock gentleman from before, which ultimately ended with them grudgingly both settling for the Experience Menu as well. The rationale given to them for insisting that everybody at the table order the Experience Menu is to ensure that no guest is left deprived of the experience. At the end of the meal, we were left gazing yearningly at the sexy-looking Dark Chocolate, Peanut Butter, Earl Grey Tea ("Reese's Chocolate") that people who opted for the $98 5-course Discovery Menu had for dessert.

Part of the 3 course set lunch for $32++. Really wanted to like this but my duck breast - while cooked perfectly - had sinew running through it, which made it tougher than expected. Decent but not fabulous.

The food is good! Especially the pork belly & octopus. AND Sangria!!!!!!!!!! πŸ˜‹πŸ˜‹

Another highlight that should be ordered at Binomio. While it seems like there's a lot going on, the best way to eat this would just be to mix everything up and eat it like a "salad" of sorts. The runny egg mixed with the sauce provides a nice "dressing" for the squid, beans and chorizo. I like that there were bits of chorizo in there which makes it more savory with a smoky flavor. Calamari was fried perfectly, and not over cooked, while the beans gave it a nice crunch. Best shared amongst 3-4 people.

Showcasing its versatility, the sous vide carrots arrived seared, as a sponge, a marmalade, and a vibrant emulsion. I was impressed by the incredible depth of flavour this humble vegetable could achieve; its sweet, fruity taste elevated by a trio of delicious accompaniments: hummus, fresh cream cheese, and the ever-amazing dukka.

My set lunch today (I chose the $120++ option) comprised of a starter, a bowl of chawanmushi, five pieces of sushi, a mini sashimi rice bowl, a Tokyo-style tamago and some fruit. And it was flawlessly executed from beginning to end. I was truly impressed by the attention given to every aspect of the meal. I mean, even the chefs sport shaved heads for hygiene reasons! So of course, it was wonderful to see that same obsession carried through to the food.
Arriving first was a bowl of satiny soya bean curd skin smothered in crunchy ikura and finished with a dusting of yuzu, freshly grated wasabi and get this, soya sauce jelly. Such a creative touch, don't you think? The chawanmushi, easily one of the softest and silkiest versions I've ever eaten, included Japanese radish and a piece of fish. As for the sushi, although I felt they could have been larger (yes, I am greedy and I have a big mouth), every one of them was of the highest quality. Well, considering the seafood at Hashida is flown in six days a week either from Tokyo's Tsukiji Market or Hokkaido, I guess it shouldn't come as a surprise. It was also fascinating to watch the chef prepare the sushi right in front of me. He moved with incredible grace and fluidity even when doing something as simple as pressing fish to rice. And because he carefully seasoned every piece of sushi before placing it on the lacquered stand in front of me, I found no need for soya sauce or wasabi. What's more, to do so, he used only a pinch of sea salt, the freshly grated zest of a yuzu, a brush of Hashida's special sauce and the like.
My meal was brought to a close with the kimono-clad waitress serving a small plate of sweet fruit from Japan (it was a strawberry and orange today).
I would conclude to say this is a restaurant worth trying if you desire a refined sushi experience that's pretty good value for the high-end quality (sushi set lunches are priced at $80++, $120++ and $250++). However, if you are famished or have a huge appetite generally, it's likely you'll leave feeling less than full.

Rosemary smoked organic eggs. This is one silky creamy smokey savory goodness!

The pigeon dish was also really tender, moist and flavorful. Having had poorly executed pigeon dishes before, this definitely has redefined how pigeon meat should taste!

Pre dessert was a cucumber sorbet that was so refreshing. It definitely cleanses the palate to prepare for the dessert course.

Another great pasta from La Nonna. They were so generous with the tender chicken slices, sun-dried tomatoes and garlic (loads and loads) that every mouth was loaded with its ingredients and flavour. I liked how the garlic was in big chunks instead of being chopped finely, as it gave more texture to the dish. Thumbs up! πŸ‘
