While others might eat bak chor mee for its noodle flavour, I indulge in it for the Japanese-style cha siu. Yes, 51 Noodle House has whipped up bak chor mee with a Japanese twist. The very soft, chewy yet slurpy noodles over a base of homemade savoury sauce mixture are topped with a soft-boiled egg, loads of minced meat, lettuce, and 5 neatly sliced pieces of succulent cha siu. Itβs like a localised version of mazesoba. Every piece of pork belly is fatty, full of flavour, and incredibly tender.

Modern and Japanese take on bak chor mee with the addition of ramen-style thin cut chasiew and onsen egg.
The noodles were tossed in a lightly savory sauce (likely from lard oil) with mild spicy undertones that reminded us of kolomee. Mixing in the onsen egg and some soup allowed for creamy and slurpworthy bites. The noodles and liver were unfortunately overcooked, the former being soft and the latter tough. That aside, was a huge fan of the soup which unlike the usual standard fare, had a stronger umami and shoyu flavour profile, more akin to Japanese soups.
51 noodle offers a similar concept to A Noodle Storyβs wanton mee but perhaps Iβm more a traditionalist when it comes to minced meat noodles and have a preference for richer meat flavours and vinegar tang. A decent bowl nonetheless worthy trying for those looking for something more unique, and quite value for the price with its generous array of ingredients.

The accompanying broth was flavourful.
Mom felt that the seasoning in the noodles was kind of heavy.

Fusion bcm with Japanese char siew and onsen egg. I guess it was due to the onsen egg, the whole mixture was very saucy, which was good as I tend to find usual bcm too dry. Generous amount of pork liver given ππ»
