A lush green dream to fall in love with. This tiramisu has a soft, delicate spongy base layered with rich, creamy matcha-infused mascarpone cheese. The elegant taste of matcha, from the soaked sponge to the cream, is so refined—it’s like taking a bite out of a forest.
The houjicha cream turned out to be surprisingly dense, contrary to my initial expectations. The brownie was slightly fudgy, layered with a thick amount of houjicha cream, then topped with vanilla ice cream and sprinkled with houjicha powder. The brownie was warmed up before serving, adding an extra moist oomph.
I was truly impressed by this stack of love. Yuzu ocha-infused mixed grains are stacked with smashed avocado, grilled Norwegian salmon hash, edamame, flying fish roe, onions, cherry tomatoes, bonito flakes, seaweed, and furikake. A hearty, warm treat that melts the soul and fills the belly. The mix of creamy, zesty, savoury, and tangy flavours creates a lovely sensation.
Munching on this fusion rosti with a Japanese twist. Crispy, thin shredded potato is crosshatched with sweet-tangy okonomi sauce and Japanese mayo, then sprinkled with tempura crunch, bonito flakes, scallions, and nori. It’s a pure potato pancake without any other veggies or batter.
