After months of wait due to renovations and reopening delay, the popular dinner and supper spot “Bedok 85” has reopened, just in time for dine in or takeaway orders. One stall that I was highly anticipating for it to reopen is Shi Wei Da 食为大, the stall was even a previous Michelin Bib Gourmand recipient, which sells a fast disappearing dish of our hawker culture, the satay beehoon. This dish might not be at the top of many of our hawker favourites and some of us have not even tried it before but its so rare that you hardly see it selling elsewhere. Plus, the fact that it looks like a dollop of sloppy mess that will not make it to many people’s Instagram feed, we might have to soon add this dish into the books of forgotten hawker food.
What make a satay beehoon? Based on my observation from the way the uncle prepares this dish, he first grabs a handful of kangkong, bean sprouts and vermicelli noodle, throws them into a strainer and straight into the water boiler. When those are cooked, he drains them dry and transfer them onto the plate before picking some tau pok, pork slices and pork liver and give it a good boil in the water before assembling them on the noodle. Finally, he scoops up some of the magical hot satay sauce, pours it over the pile until everything gets drenched and covered.
The key component of this dish is undoubtedly the rich and thick satay sauce and from some research done (thanks @danielfooddiary), I read that the owner prepares the peanut sauce from scratch and what makes his satay beehoon different is that he does not add any cockles, prawns or cuttlefish compared to the few that are still in this trade. What you are getting from this plate is a multi-layered of flavours from the sweetness to savouriness and spiciness. When you are there in the evenings, you should be expecting a long queue for this and since you are already at it, ditch the $3 portion and go straight for the $4 option.
