Famed chef and restaurateur, Chef Otto Weibel, has opened a new grill restaurant at Orchard Rendezvous Hotel, paying tribute to his love of the Mediterranean. While he conceptualized the menu, his protégé, Executive Chef Kenneth Loke, runs the kitchen team at White Marble. The flavours that you will be tasting at White Marble are inspired by the many countries surrounding the Mediterranean and hence, this Mediterranean cuisine pays homage to the Spanish, Portuguese, French, Italian, Greek, Moroccan and the Middle Eastern tastes and techniques. The hearty portions at White Marble make it a suitable dining destination for dinner dates or group gatherings.
Kickstart your meal with the Mezze Plate ($34), one of Chef Otto’s favourites and a signature dish of the restaurant, which consists of falafel, tabbouleh, hummus, eggplant moutabbal, chicken skewer and pita bread to mop up all of these dips. You can then order a couple of sharing appetisers like the Roasted Butternut Squash ($12) with an addictive chilli yogurt and the Octopus ($36) that has been first boiled for 45 minutes before it is pan seared to a char, and paired with a mashed confit garlic cream, deep fried shredded potato with the finishing of pistachios and chilli oil.
We all agreed unanimously on the Prawn Bucatini Puttanesca ($28) for that perfect al dente pasta with the addition of Spanish anchovies to give it the brininess and fresh herbs to create that refreshing flavour. A great sharing dish, if you have a company of two, is the Chicken Leg Bone-in Tagine ($60), which is first grilled, then cooked with whole red onions in the tagine. The addition of the preserved lemon, dates, olives, capers, and tomatoes help to cut through the richness so that you can enjoy the dish without feeling surfeited. Coming to White Marble, you have to try the skewers such as the Seafood Skewer ($38) or Australian Lamb Skewers ($48), the former having the octopus, white fish and prawn with assorted vegetables while the latter is skewered with Australian lamb and assorted vegetables. Both are coated in an extra virgin olive oil mixture with lots of fresh herbs and lemon zest. To go with the meat, the restaurant will provide 3 sauces: lemon garlic cream, harissa aioli, and salbitxada, each bringing a unique and different flavour profile.
