Was informed about the opening of Madam Flod Creperie by a friend some time back who had seen them undergoing their renovations at that point of time — these folks have finally officially opened their doors at 47 South Bridge Road recently. Located along the same row of shophouses where one can find other F&B establishments such as that of Kobashi, Un-Yang-Kor-Dai Singapore and the outlet of DOPA at South Bridge Road., Madam Flod Creperie had taken over the former premises of the now-defunct MinXiaoMin 闽小闽; some might better relate to the space being where the now-defunct Pomme used to be. Madam Flod Creperie is an establishment that comes with a rather interesting background story; the folks behind Madam Flod Creperie also used to run Madam Flot Boat — a seasonal food boat in Stockholm that serves crepes, galettes and pizzas. Other concepts previously run by the same team would be Flytande Deg; a food boat serving pizzas only that also is based in Stockholm, and Mer Deg — a pizza parlour in Sweden. Madam Flod Creperie is decked in a way that is both rustic and contemporary; there is the use of raw elements such as the cement floors and wooden furniture and fittings within the space with painted walls at half-height and chalkboards, but the space at the same time exudes a intimate charm with its slightly dim and yellowish lighting that really sets the mood. Dining tables are a mix of round tables and rectangular tables that are matched with green-coloured cushioned seats; each round table being able to seat three (3) pax while the rectangular tables are able to seat two (2) pax with the flexibility of joining the tables for larger groups of patrons. There is also a larger, chef’s table style of seating nearer towards the open-concept kitchen that would seat larger groups, though patrons seated at the table would be using stools rather than dining chairs. As the namesake of the shop already suggests, Madam Flod Creperie is an establishment that primarily serves up French crepes; the food menu at Madam Flod Creperie is segregated into categories such as Starters, Galettes and Crepes, while beverages offered at Madam Flod Creperie includes a line-up of wine, cider, beer, juices and coffee — just to name a few.
Whilst skimming through the menu, one of the items that caught out our attention fairly early on from the Galettes section of the menu would be the Roquefort. The menu describes the Roquefort to come with elements such as Roquefort, Emmental, Chèvre, salad, vinaigrette, butter roasted walnut and honey. This is one of the Galette offerings that do not come with any elements of meat; elements such as the Roquefort, Emmental and Chèvre are all strong-tasting cheeses — the combination of elements that came with the Roquefort does remotely remind us of the renditions of Waldorf Salad that cokes with blue cheese. Considering how there is a mix of blue cheese and goat cheese in the Roquefort, it can be said that the Roquefort is one galette that those whom love pungent cheeses might be able to appreciate, though we still found it to be much manageable considering how there is a fragrance from the batter of the soft galette alongside the nutty crunch of the roasted walnuts. The inclusion of the honey also subtly adds to neutralising the notes of the pungent cheeses as well, while the salad adds a light, crisp and refreshing crunch to help reset the tastebuds.
The Pandan Kaya is one of the items that can be found in the Crepe section of the menu. The menu describes the Pandan Kaya to come with Singapore Pandan Kaya and whipped cream. Slicing through the soft crepe, we initially thought that the Singapore Pandan Kaya element can only be found on top of the crepe; turns out that there is also quite a fair bit of Singapore Pandan Kaya that can be found being spread within the folded crepe as well. The Singapore Pandan Kaya used here does seem to be the mass-produced and commercially-made ones, though it comes with an evident hint of Pandan and coconut-y fragrance without being too sweet; went well with the buttery crepe as well. The addition of whipped cream also helped to neutralise the flavours as an element to gel all of the elements together. Quite a good dessert crepe to end off the meal considering how it was able to cut through the heaviness of the cheeses from the Roquefort.
The Caramel Macchiato at Madam Flod Creperie is mentioned on the menu to feature a homemade salted caramel sauce; felt that the Caramel Macchiato here came with a little too much milk, while the homemade salted caramel sauce didn’t quite blend in easily with the beverage despite stirring with the paper straw considering its consistency. It does seem that the folks at Madam Flod Creperie are still trying to sort out their operations since the establishment is still quite in its early days — they do seem to have been pretty shorthanded in their staffing and not quite have anticipated having to operate at maximum capacity during our visit with people still streaming into the establishment at the same time, though they seem to be making their best effort to do as much as they can despite the fast pace of things happening whilst also being pretty apologetic towards patrons whom have waited for a while or have had missed orders. Food quality is great at Madam Flod Creperie, and prices are also set reasonably at the same time with its various crepes and galettes being priced between $9.50 for the Sugar & Butter Crepe and $25.50 for the Salmon Galette. Overall, Madam Flod Creperie is a spot worth heading down to especially for those whom are into crepes and galettes; after all, such offerings do still remain a rarity in the Singapore dining scene with very few establishments serving up such items. That being said, perhaps it is best to wait for a while for Madam Flod Creperie to settle into its operations if one wishes to experience them at their best — whilst the a crowd would probably form by then for their crepes and galettes, we do feel that they would probably be better equipped to deal with the situation as they smoothen their operations after the initial phase of opening; looking forward to giving a return visit to be able to try more of their Galettes in the future!
