The newest addition to CHIJMES is Lumbre, a modern Spanish grill restaurant featuring a menu of Spanish small plates and grilled dishes!
One of my favourites of our meal was this Seafood Wet Fideua. It was impressively smoky and intensely rich in its seafood flavour. Instead of the usual rice in paella, you have pasta noodles that have thoroughly soaked up the tomato-pepper sauce and seafood stock base. The bits of calamari mixed in gave extra texture, while the smoked eel was well-charred.
Had this a while back (think the price has increased slightly now) but I still remember how good it was! It was one of the best paellas Iāve had thus far. Each al dente grain soaked up the smoky seafood flavours and I loved the bite of them along with tender bits of squid hidden within. It was rich but not too overpowering, hence addictive and very easy to wipe clean. The dollops of garlic aioli also served as refreshing bursts through the dish - try not to mix them in as it would be masked by the squid ink. Great main to share with 2-3 other friends along with other tapas!
Taste wise, this was the groupās preferred dish (along with its tuna steak) of prawns in virgin olive oil and garlic - we ended up mopping our fries and burger buns in the sauce! But, would have also appreciated the use of bigger and fresher prawns - missed that extra umami prawn head flavour.

Thinly battered and lightly seasoned, this simple deep fried calamari was a nice starter.
We got this as part of their $60 Tapas Menu that consists of a choice of 6 dishes.
Our scrambled eggs werenāt exactly the usual sort, but it was still tasty nonetheless! It was a tad oily, but folding the runny egg yolk in helped to balance it out. Our favourite part of the dish has got to be the chunks of fried potatoes hidden underneath, carefully cut to have several layers in each - helped to mop up the yolk and provided a really nice texture.

It was a well seasoned paella (especially the charred bits on the sides) but the thinly layered portion was a little disappointing. Scallops were fresh and done great, but we also thought that deboned pork chunks would have made it a better overall experience!
This dish was the main reason why we went for the $60 Tapas Menu instead of ala carte (seemed to be more value for money to get the former even though there was an additional $6 top up). Thought the bed of mash could be smoother but the slices of octopus topped with smoked paprika were done well - not chewy but tender with a light smokiness and a touch of spice!
One of our favourite dishes of the night, fresh plump prawns served in an addictive oil that was garlicky and full of prawn flavour. A pity that it came with only two small and thin slices of bread. Wished they were more generous - we could have mopped up all the oil with them!

Nicely crisp with a lovely side of bittersweet chocolate dip, but would have liked the churros to be slightly thicker to get more of that tad chewy and fluffy texture!
The portion of our weekday set meal was just nice for us but the plates of churros that kept coming out from the kitchen looked too good to miss. These warm fresh sticks were super fluffy with a nice crisp, dusted in sugar that weren't overly sweet. Having them on its own already tasted great but I also loved the side of bittersweet chocolate dip! So glad we got them!
