Ramen

Sometimes I think that all ramen is is an expensive ba chor mee with richer broth and it makes me sad, but sometimes it's worth it.

Mazesoba reminds me a lot of ba chor mee and bibimbap because it’s a dry noodle dish, but you need to mix it well haha! I got the mazesoba with cod roe (mentaiko), which came with a tender piece of char siu, spring onions, bamboo shoots, and seaweed. I took more than half of the mayo out because I thought it would be too much for the portion of noodles they gave.

Overall, it’s okay. The noodles are springy, and as a mentaiko lover, this was delicious and not too fishy. But the noodles left me quite full and it was quite a heavy dish. The kaarage (fried chicken), which I tried from my friend’s bowl, was amazingly crispy and juicy inside though. Worth a try, but this probably isn’t my go to meal.

Was honestly sceptical about ordering ramen from a tendon place, and the ramen didn’t look the best, but I was quite impressed by both the quality and value! They give a huge portion of noodles, and there’s quite a bit of pork and cabbage as well. The noodles were really springy and held up well in the tasty broth, which didn’t taste too heavy despite being miso based. The eggs were also soft and gooey. Wouldn’t mind having this again!

Despite the colour, the Dan Dan noodles weren’t as spicy as I thought they would be. There’s a predominant taste of sesame paste and peanuts, with a hint of chilli only picking in after. I didn’t really enjoy this that much as I don’t enjoy spice, but my siblings really like this dish despite its milder flavours.

This Crystal Jade serves quite a few la mian (ramen), and I like the texture of their noodles. Despite being thin, they have a real bite. These beef noodles were really tasty because the soup had a robust beefy flavour, and the meat was quite tender! I would get this again.

I love their mentaiko ramen, which comes with good katamen (firm noodles), a generous dollop of mentaiko, a perfect ramen egg, and the best sliced charred charsiu. This was definitely one of my top ramen places, but this time, it didn’t really perform. Although generous, the mentaiko was too much and made the dish too salty. The noodles also had a slightly slimy texture, which I think is probably because the noodles lacked sufficient oil to separate them. A real pity, because I absolutely love having their charsiu with mentaiko noodles. (Plus, the mentaiko is the real stuff, without any mayonnaise to dilute it!)

Opposite me was the garlic ramen that my friend had - which was extremely, extremely salty, even if you have heavy tastes. Definitely a disappointment for this one. Rather sad too because it was my friend’s first time to this place. Oh well! Would still come back for the mentaiko ramen though, but probably mix the mentaiko in moderation.

I was anticipating trying this for a while but I have to say I was really, really bummed out. The ramen was way too salty and peppery for me and I hated the broth. (A strong word, but deservingly!!!) The hakata noodles were also not as hard as I would have liked them to be, even though I indicated the hardness on the form. I guess the only saving grace were the endless bean sprouts that I ate and the char siew, which was actually really nice and tender.

This ramen is at a coffee shop in AMK and I decided to try it since I was curious and found out that the owner is the former founder of the website “The Real Singapore”. (Haha, the ramen shop also stands for TRS.) Sadly, the ramen was really subpar- you’d be better off just getting any ba chor mee or ban mian. The tonkotsu broth was very bland and watered down, and the miso one didn’t even taste like miso at all- I’m not sure how to describe it actually.

Featuring the ramen from the new Ippudo outlet at Star Vista that just opened today! We tried the Shiromaru Motoaji and Bonito Tonkutsu ramen. I preferred the former, because the broth was much lighter than the latter. However, the latter’s broth was quite interesting because the bonito taste was so strong, and there was a yuzu pepper paste to go along with it as well. All in all, the ramen was alright. Less salty than usual ramen shops here, but wasn’t particularly outstanding to me either.

I really enjoyed the pork belly slices instead of the usual slab of meat (which is more often than not, dry or rough and generally unpleasant). The noodles were also great and the portion size was so huge that both my friend and I were stuffed.

One thing to note is that the ramen broth here is already very thick and quite oily - even so when we opted for the lighter soup base. Otherwise, the ramen is great!!

Of course, I consumed enough of the free bean sprouts to probably account for half of the tub..... Also!!! The staff were really helpful and even helped us peel one of the free hardboiled eggs each!! (Which was probably because we came when it had just opened, but it was a really nice gesture!)

Went to try Uma Uma at Forum to try their unique mentaiko ramen ($17) during their 5th anniversary promotion (1 for 1). It was a dry base with mentaiko sauce and I really enjoyed it more than I thought I would! It wasn't too salty or fishy and I joked to my friend that next time I would order dry ramen and bring a tube of mentaiko paste with me whenever I eat ramen. The char siew was also nicely cut and seared and quite generously portioned.
