Standing right in the middle felt like I was in a bermuda triangle. It was eenie meeny miney mo and a choice was made.

Bakchormee (minced pork noodle) is bakchormee right? For me, the most crucial component is the sambal chilli. It needs to have that spicy heat to lift up the noodle which is bland in nature. Added vinegar and a tinge of fish sauce gives it more body. So this bowl had the saltyness and the spicyness. Flavorful bits of minced pork and sliced lean meat. Just a reduction of monosodium glutamate or none is what I would prefer.

This is quite a popular stall judging from the queue during lunch hours. Tummy filled, time to slow mo my way for errands.

Not a perfect bowl of laksa but it had the taste, the heat and a tinge of old school comfort. Dont have to go far and wide for michelin or bib gourmand laksa. This will do just fine.

My solitary food journey led me to what others call it "the army's market". Here to try out the hainan fried hokkien mee which is abit under the radar. Elderly uncle was vigorously tossing, turning and scooping the prawn broth over the noodles again and again. He lets the broth infused into the noodles resulting in a short wait for it to be ready. What you get is the drier version, no gravy or broth. There was a certain bit of umaminess. A tinge of wokhei lingers on the palate. The sambal chilli even it was so little, had a yummy spicy heat which will leave a perky mouthfeel. I wouldnt say it is the best but it is different from the wetter version.

Soft but firm chewy texture. Sweet but sweetness didnt come from sugar as none was added. It is natural sweetness from the red dates. Ohhh and it does not stick to the teeth. It was good good good!

Looks like meekia but it is not. This is dry meesua. Not many stalls offers dry version as meesua is a little tricky. If overcooked it becomes soggy and mushy. This one was cooked just right. Soft and silky. The chilli sauce is very mild with not much heat. With a tinge of vinegar, you get that sourish tangy finish which is rather pleasing on the palate. I really adore the tiny bits of minced pork and ikan bilis as I reached the bottom of the bowl. My bowl of noodles is absolutely definitely my simple indulgence.

Potato gnocchi, spinach, aubergines, sundried tomatoes and pine nuts. Gnocchi was texturally soft with a nice gentle crisp on the exterior. Aubergines melt in your mouth. Tiny in size, the pine nuts had a dainty crunch which balanced off the soft textures. Tomatoes were sweet. It gave that delectable umaminess of the whole dish. Absolutely savory sweet that got me licking my lips over and over. My favorite mains during the tasting. I could eat this again ah!!!

The set lunch is priced at $48++ and $58++ for a 3-course and 4-course respectively. Quite reasonable as portions are quite substantial. Amazing view!

An appetiser consisting of different kinds of carrots.

Purple, orange, greenish yellow carrots garnished with carrot puree and carrot chips. Simple ingredients transformed into a delish appetiser. Tangyness from the yuzu dressing with crunch from almond granola. One of appetizers from the set lunch. I loved this too much! My fingers frozed as it was just too pretty to demolish the art.

Even before I took my first bite, I could smell the truffles.

One little bite and the broth oozes out. Thin translucent skin with the lightly seasoned minced pork and yes.... the evident taste of truffle in the broth. Some daring ones just pop the whole thing in and all the steam & flavors bursting at one go. But I just like to tease it abit, bite one tiny bite and sip the broth drop by drop and savor the meat later. I dont know about you, but this is a must order everytime I "din tai funged".

I "truffled" love this as truffles was not overwhelming. One of the dishes we had during the "lohei"tasting. Of course, the main lohei star will be posted soon.

My hunt for those under the radar, relatively unknown to many but still have their fair share of customers. We have seen many posts of the popular, well known hawkers, those with ridiculous long queues and waiting time. Does that mean the others are not just as good? 🔸🔸
I hit one of the oldest estate, Toa Payoh. Here the old and new embraces each other. This lormee stall located in Toa Payoh Central has been around as long as I can remember. A no fuss no muss bowl of lormee. Garnished with fishcakes, braised lean meat, half an egg and the crunchy bits. The gravy, if compared with other lormee stalls, is a lighter brown. It is gooey and slightly silky but not overstarched. But after awhile it turns a tad liquidy. Quite tasty actually. Request for more chilli as it packs a fiery punch. Topped with minced garlic, it just hits that sweet spot. I liked it!

This stall is tucked in a corner of the kopitiam. Just look out for the queue... yes... they do have a steady stream of customers.

But where is the flame? Well, I was torn between showing beef on fire or the actual dish after flambed. So I got to thinking, most would post the fabulous flame so this post is the aftermath which highlights the actual dish.

Structured looking like a mini volcano with the egg yolk ready to burst and flow like the golden lava. It was a slow beautiful flow. Beef was sliced thinly. After being flambed, it is caramelised and lightly charred leaving a tinge of wokheish flavor. Toss, mix and tumble all and one gets a comfortable bowl of beef donburi.

Currently there is a promo on till Feb, rice bowls are going at $11.90. Original cost for this flaming hokkaido beef bowl is $23.90. Very reasonable and generous portions of beef.
