Think gateau mousse, only this is a savoury riff conjured from the creamiest and dreamiest foie gras. In the heart of the dome lay a black currant cremeux, whose tart, fruity nuances balanced out the rich savouriness against the lovely, gritty contrast of its almond meal base. Delicious, but my Asian palate found it a tad overwhelming midway through. Share this with another and it'd be just perfect 👌P.S. This is a chocoholic's dream. Dig into those luscious layers of chocolate mousse and sorbet, a lovely combination that's light as a cloud. Chocolate pearls and vanilla crumble gave it a little crunch; its chocolaty and buttery flavours diffusing on the palate with every spoonful. So delightful, until you realise that it's all gone :(
Pommes purée here lived up to its legendary reputation all right. Creamy, buttery, viscous yet smooth like velvet, these mashed potatoes are wickedly indulgent. Served with every main, limited to one serving during lunch and free-flow during dinner. However, ask nicely and I'm sure the friendly staff here would be happy to top it up for you even at lunch :)
Beet-ing the heat with a refreshing cold starter. The tangy, piquant flavours were intensified in this ruby-hued gazpacho, counterbalanced with sweet nuances from beetroot and a very addictive vegetable sorbet (that tastes amazingly fruity). Then things get even more interesting with the occasional burst of savouriness from the smoked duck strips. Summer just got a whole lot more delicious.
As with all LAJR restaurants around the world, every meal here begins with a delightful amuse bouche served in a shot glass of foie gras custard, port wine reduction and Parmesan espuma. Creamy, yet light; subtle, yet distinct. Its understated flavours opened up the palate for more enthralling sensations ahead.
