Think gateau mousse, only this is a savoury riff conjured from the creamiest and dreamiest foie gras. In the heart of the dome lay a black currant cremeux, whose tart, fruity nuances balanced out the rich savouriness against the lovely, gritty contrast of its almond meal base. Delicious, but my Asian palate found it a tad overwhelming midway through. Share this with another and it'd be just perfect 👌P.S.
