I'm Malaysian, it's difficult to impress me with Singapore food, but this one caught me off guard.
I expected a clear soup like those normal noodles places in SG, but was surprised when they poured out a rich creamy looking broth.
One spoon of that broth was enough to convince me that these people don't play around. A rich thick and creamy (almost tonkotsu) like broth full of Umami, sweetened by a hint of Chinese cooking wine.
My guess is that it's made with pork bones and shrimp, and it being close to their closing time, the soup had the opportunity to shorten and bring out the delicious combo of herbs, meat and collagen
