Galbi jjim or braised short ribs is a traditional chuseok dish. It is regarded as a high-class dish as it is made from only from the center part of ribs from a calf which is more expensive than other cuts of beef in Korea. The ribs are mixed together with soy sauce, sesame oil, scallions, minced garlic, pepper, ground sesame with salt (깨소금), ginger juice, and sugar (usually fruit puree) before it is simmered over a medium flame. Ginko nuts, jujubes, pine nuts, chestnuts and shitake mushrooms are then added to finish this dish.

The preparation of this dish (and the short ribs in particular) is time-consuming but the end product is just delicious. The seasoning tenderizes the meat and the slow cooking process allows the rich seasoning to seep through the meat. It is melt in your mouth goodness. The braising sauce is perfect with a bowl of rice.

We visited Gangnam Myeonok's branch in Insadong and needless to say, left belly satisfied!
