Ishii Miso (Nagano)

To complete my experience, I added a serving of Miso Soft Cream for an additional ¥198 (normally priced at ¥400). Let me tell you, the Miso Soft Cream was phenomenal. The fusion of chilly, sweet, and savoury flavours hit me from the first mouthful. It instantly became my new favourite ice cream flavour.

Miso Brewery at Ishii Miso was an opportunity I couldn't miss—a chance to indulge in a miso feast steeped in tradition. Established in 1868, Ishii Miso still adheres to the natural methods of miso production.

For my meal, I opted for the Shinshu Pork Loin Miso Ginger & Set (¥1628)🐷, with the option to change the miso soup to pork soup for an additional ¥198. The Shinshu pork loin was marinated in a blend of 3-year and 1-year aged miso, mirin, and grated ginger. The miso and ginger flavours permeated the meat, creating a delightful aroma. While the pork was slightly tough in texture, this ensured it was cooked thoroughly. The accompanying soup was generously sized and brimming with savoury umami notes—a heartwarming and comforting bowl. The miso soup and rice were refillable, allowing for a truly satisfying experience. The set also included pickles, salad, amazake, and Sannen Miso Kuzumochi.

I also tried their self-manufactured three-year aged miso dressing with black vinegar and ground sesame. The unique combination balanced the tanginess of vinegar with the savoury character of miso.
