Found this interesting Appam stall at Maxwell Food Centre that the owner is a Vietnamese lady. This is because of the stall location that required to offer certain kind of cuisine.
The Vietnamese lady is very kind here and patiently making pieces and pieces of appam upon order.
It has the crunchy outer layer, but firm texture at the middle. Which I went for the egg option that she will place it at the center. You can request the egg to be half or fully cooked.
