Shinjitsu Ramen, located in a kopi tiam in a (somewhat) inaccessible part of Ang Mo Kio, has been in the news recently for its $5.90 ramen that comes with one whole chicken leg. However the 𝗧𝗼𝗻𝗸𝗼𝘁𝘀𝘂 𝗦𝗽𝗲𝗰𝗶𝗮𝗹 ($10.90) caught my attention instead.

Consisting of 4 slices of chashu, black fungus, one large piece of seaweed and one ajitama, it was indeed sumptuous. A similar bowl at a typical ramen joint would cost at least $18 before taxes.

The tonkotsu broth was rich and flavourful, and it certainly heightened my expectations. The noodles had a nice, firm texture while the black fungus, usually served as tiny pieces at ramen joints, came in one big piece here, so I was pleasantly surprised.

The chashu could've been more tender and the egg yolk more molten, but at this price point, you can hardly find a better bowl of ramen.
