My word. The beef tongue is beautifully grilled, so that its tenacity warrants just the right amount of chew. Pork belly accompanies it, just shy of wholly done, as if beef tongue alone doesn't suffice an everyday lunch. There is even an option to introduce chicken to mix – at which point we feel they're trying to induce a food coma.

Buried under the meats; the thinnest of cabbage strips, and under that, a bed of Japanese rice, anointed in shio and lemon (of course, there is miso on the side).
