Ribeye (part of four-course tasting menu)

$25.00 Β· 6 Reviews

Glad to get this order in before the new menu is launched. Order was seamless and service was very prompt. I was surprised when my order was on its way to me 20mins after I place my order! (during peak hour mind you) Best part? Island wide delivery with $40min order.
And oh, the food was really wholesome, not to mention affordable. Needless to say, will definitely be back! Very much looking forward to the new dishes yay. Stay tuned ☺️ Tried the torched beef, truffle capellini, seabass with fried gnocchi and Canterbury Ribeye πŸ˜‹

The beef unfortunately fell alittle short of expectations, but maybe because the latter was built too high. Flavour was there, but alas, the meat too chewy for my liking.
The puffed rice on the side however, I thought was an ingenious idea. It had a good truffle flavour which thankfully was not overpowering, and further elevated by the creaminess of the beautifully poached egg.

I feel like this is THE main to go for: ribeye served medium rare (of course) with earthy mushroom pate + puffed rice and a lovely sous vide hen's egg. The beef was elevated to a whole new level having been soaked in ponzu for 5 days; it was sweet and tender, with notes of citrus and truffle, delicate yet brimming with intense flavour. 😍

Not gonna lie i came here for MEAT! unfortunately the highly raved ribeye was too popz and ran out during lunch so this is actually the first time duck came out on brine's menu.

And i have to admit im actually happy they ran out of ribeye cos this is the best duck ive had in my life. Now before anyone freaks out im gonna explain my case. Not only was the duck was super bouncy, it was flavourful and theres no gameyness at all. And while the inside was juicy, the skin was so beautifully seared and the maillard reaction imparted such depth.

The duck was so perfect on its own that the sides seems out of place haha. Pickled carrots(in sherry vinegar) were pungent but the chef is still in the middle of adjusting the recipe, and this combination is temporary until stocks come in so stay tuned!!

The "curry carrot" puree also felt out of sorts and is actually the only thing i didnt finish today.

Then again the duck is so perfect i would order the dish again just for the duck!

The four course set lunch was really reasonably priced at $25+, & only came up to $16 after the 40% off (till 23/4) the medium rare ribeye was particularly memorable and paired well with the oozy eggs and crunchy rice puffs

Brine is currently in their soft launch phase, but things look promising! πŸ™Œ

My main was the five day ponzu brined ribeye, which despite looking pretty lean, was surprisingly tender. The meat they use is also Halal, though they don't have Halal certification! I was hoping for some sauce, but after the first mouth, it was definitely tasty enough to stand on its own.

Since they're in soft launch till 23rd April, they're offering a 40% off your total bill! Pretty awesome if you ask me. Don't say bojio! πŸ˜›
