The amber colored quenelle is the stuff that dreams are made of - such a fine (figuratively and literally) purΓ©e of mussels, I closed my eyes while putting the spoon in my mouth, and I went to heaven. Heck, that was even better than eating the mussels right out of the ocean. #burpple #cheekbyjowl
After a whole series of intensely flavoured food, this dish would pale in comparison... but there is beauty in its simplicity. Fish is one of those things that should be simple, and this dish focuses on it. The algae puff rice provided a nice texture, and Iβm always a big fan of a roasted leek any time of the week!
I liked this. This barramundi came with crispy skin and moist flesh, with crispy prawn floss served on the side. I absolutely love the burnt lettuce which had that heavenly smokiness, served alongside that espuma that tasted like lobster bisque.

...that chef rishi cannot take off his menu. love the fact that he insists on using locally-farmed producue, kuhlbarra.
Was most excited to try this, but I think we came with a wee bit too high expectations. Canβt deny that the fish was cooked beautifully (why, hello crispy skin and flaky flesh!) and that the bonito butter and caramelised onions complemented the delicate fish well, we just wished that the charred leeks were taken way further for that smokey punch, and maybe throw in some form of acidic relief too.

This was superbly done. The fish was moist and tender, seasoned to a T. Everything on the plate was well thought of and came together in a mosh pit of complex flavors, building upon each other.
Really loved the bonito butter, as I licked every last bit of it off the plate.
