Why does the colour looked overcooked or the oil used wasnโt clean? I personally prefer it to have slightly moist texture as this was too dry. This came really oily and they served ribs with bones intact, making it unfriendly to my teeth ใ$10/Small

So much salted egg craze going around but I still like it with pork ribs! This is a fried dry version with the salted egg in the batter, making it easy for us to consume the pork ribs without worrying about the sauce getting all over our mouth!
A very common zhi char dish these days as many chefs are creating their own version of salted egg yolk item. Some made it dry with the salted egg coating the meat while some made is slightly moist.

Pork ribs coated with salted egg yolk that failed to impress. Although each piece of pork rib was coated with the right amount of salted egg yolk, the proportion of fats to meat per pork rib was 2:1. Felt "jerlat" after my second piece.

Tasty! Although kinda dry, the flavour makes up for it. Its $10 for a small portion but i think they are pretty generous on the portion.
Another item that i often see in pictures & reviews. I like the salted egg sauce. Not the watery kind and you can literally bits of salted egg(?), or crumbs at least. I find that it gave the sauce some sort of texture. Would love it with more of those crumbs stuff though, like cereal prawns ๐
