For the visuals, one whole fresh Garoupa will be presented at your table side with a piping hot broth in a claypot. To serve, your waitress will poach the fish meat swiftly (for a few secs) in front of you. This is done so that the fish will retain its innate sweetness.

After this, you can choose to have the fish head cooked in the soup for a nourishing fish head broth or have it deep fried then served in some salt and pepper.
