The tataki-esque salmon, lying on the cold plate with its soul laid bare and more naked than Natalie Imbruglia in "Torn", positioned itself in a questionable place on the scale between happily torched and emotionally raw. 3.4/5
Possessing the rugged, outdoorsy aesthetic of Pulau Ubin forest ground, this was essentially a pasar malam-esque revelry of mouthly sensations - the nicely chilled chocolate cream gravel takes centre stage, supported by the nuttiness of pistachio, the sharp, savoury saltiness of the black olive salt and the yogurt-like tartness of the lime mascarpone. 4/5
