Wok-fried cabbage with shiitake mushrooms, dried lilybulbs and mung bean threads, all beautifully accented with fermented beancurd. Ok, that's all.

My very own pimped up mandarin orange...complete with unicorn somemore. Woots! Ok, that's all.

LOL! I mean, really seriously, look at how naked these segments of garlic shoots are. As long as they snap with a crunch, there really is no need for them to be peeled. But Mom insisted to hand-peel every single stalk before wok-frying them. And because it's Mom, wok-frying doesn't just mean simply with garlic but it must feature prawns too. Thankfully, she has "improved" through the years. Previously, it used to be wok-fried prawns with garlic shoots instead of the other way round. If you look closely, though not as many from before, you will still see plenty of prawns hidden underneath the shoots. But this is unconditional love never to be found from elsewhere. Ok, that's all.

The beautiful textures of liver, kidney, intestine and stomach β€” all lightly poached first β€” come together to form the different layers of a rousing culinary orchestra, all held together by the glorious band of ginger, sesame oil, soy sauce and cili padi, and accented by shaoxing jiu. Now, where is my rice? Ok, that's all.

Hokkien-style braised duck β€” the gravy is to die for when ladled over warm fluffy rice β€” which was left sitting in isolation to soak in all the flavours since εˆδΈ€. The meat is fork-tender and benefits greatly from the flavours of five spice and superior soy sauce. No one will say no to this unless your dietary restrictions say so or you're just sad. Ok, that's all.

Ayam kampung + pig's stomach and tendon + fish maw, lovingly double-boiled in a heady and warming broth of white pepper...perfect for this cray wet weather. The white pepper makes up for its lesser complexity (in comparison to the more pronounced and rounded aroma of black pepper) with its heightened spiciness. The organic chicken's natural sweetness shines through in perfect contrast with the heat while the stomach and tendon provide such textural bite to the palate. So much love. Ok, that's all.
