Trying Appam or popularly knows here as Hoppers; Thin pancakes with crispy edges made from rice flour, coconut milk and palm toddy (or yeast). Wonderfully versatile they work with eggs, curries, chicken and vegetables. My favourite right now is an egg nestling in it while overlooking the golden sand of Negombo. Perfect to set you up for a day of palm trees, sunshine and the beach. Oh life!
